Let’s start again from our land is the true motto at the origin of everything for I Borghi dell’Eremo. Managing 500 hectares of countryside and enchanted forest, springs and valleys that trace the lifeline of the entire territory is an enormous responsibility towards Nature and man who is actively part of this vital and productive cycle. This is why, since 2014, the recovery and valorisation project of I Borghi has had “the land” as its starting point.
The Land and the Woods
The first objective in order of importance was the rescue of tens of hectares of countryside that were in a state of abandonment, trying to put back into production, following biological and sustainable criteria, all the agricultural capital that peasant wisdom had planted and safeguarded until until then.
At the same time, we considered it essential to protect the enormous wooded area surrounding the estate, inserting fire control and anti-poaching systems, starting what later became a real prevention work for the entire territory.
Energy and optimization of resources
The recovery and opening to the public of the villages of Crocicchia and San Giovanni required the addition of a new step to the project: including home automation in the management of consumption and irrigation, ensuring that technology actively intervenes in all aspects, safeguarding the environment and consumption, placing water monitoring as the primary asset for controlling and combating waste.
THE GREEN LINE FOR ENERGY PRODUCTION
An important part of the project concerned the heating system: it was in fact essential to provide an eco-sustainable and possibly internal circuit system. The turning point came with the purchase of a new technology combustion system which involved the exclusive use of biomass produced by us, in particular:
- the stone (the waste part of the olive during milling),
- olive tree pruning waste,
- wood chips, obtained from fallen or dead plants within the 500 hectares of woodland on the estate.
This allowed us to save all the emissions coming from an alternative combustion system and allowed us to give value to that biomass that was considered unusable waste. Added to this are 200 photovoltaic panels which contribute between 60 and 80% of the energy needs of the Borgo di San Giovanni, equipped with LED bulbs from the beginning.
CIRCULAR ECONOMY
To date, targeted management of all agricultural areas has allowed us to invest in a new formula of respect for the environment and the territory: focusing strongly on the internal production of vegetables, fruit, organic EVO oil, saffron, honey, aromatic herbs, which they will be intended for internal use in our restaurants, for tasting and for direct sales aimed at customers who regularly frequent our activities.
We support the territory by purchasing as much as possible from local suppliers, who we allow to offer us
their quality products and at the same time remain linked to the production area, triggering a circular economy system.
Since 2023 we have been a Partner in the EcoLuxury – Retreats of the World, which brings together the most exclusive resorts and historic boutique hotels, and, at the same time virtuous hospitality samples conceiving the industry through sustainable and socially responsible awareness according to the 17 Sustainable Development Goals of the 2030.
